Following is a simple gourmet camping recipe to get you started. This fish dish is not too complicated to prepare, especially if you do some of the preparation work, such as mincing the garlic and zesting the lemon and lime, in your kitchen beforehand. The dish is also simplified since no complicated pieces of camping cook ware or utensils are needed all you need is aluminum foil, and a portable grill if desired.
Place two salmon steaks on some heavy duty aluminum foil
Grate some lemon and lime zest into a bowl
Squeeze some lemon and lime juice over the fish and squeeze the remaining juice into the bowl with the lemon and lime zest
Sprinkle over the salmon one tablespoon of light olive oil, one teaspoon of cumin, one teaspoon of minced garlic, and salt and pepper
Cover the salmon with thin slices of lemon and lime
Mix three tablespoons of melted butter with the lemon and lime zest bowl, then spread on top
Close the foil packages and cook the salmon by placing in hot coals near the fire or on a grill
The salmon is done when the fish becomes flaky
